Peanut Butter Oatmeal Chocolate Chunk Cookies

Yesterday evening I decided to go ahead and make those peanut butter cookies after all.  Somebody recommended Mrs. Field’s PB cookie recipe.  The recipe I used is supposedly hers.  I guess it’s from her cookie cookbook.  Here’s the recipe >here<.

My changes:

* I substituted 1/2c flour with oatmeal (It wasn’t really that noticeable.  I’ll probably try it with 1c. next time.)

*I put a Hershey’s Special Dark candy bar inside 2 wax paper bags and pounded it into smithereens  with a glass measuring cup.  Feel free to use chocolate chips or the chocolate bar of your choice.  The pulverizing tool is also up to your creative devices :)

*I was told to beat the heck out of the wet ingredients… so I did (and it felt good!).

*I used an airbake pan (the generic Wal-Mart “Mainstays” version) and a small cookie scoop.  I ended up with about 2 dozen on the pan.  They came out just barely touching.  I did 22 minutes in my convection oven which ended up in crispier cookies.  I did the second batch for 20 minutes and they came out nice and chewy.

And enjoy!!!!!
