The Perfect Vanilla Cupcake Bake Off!

While searching for the perfect vanilla cupcake recipe online I found site after site with claims that “this” was the perfect recipe. It seemed like many fellow bakers were trying to improve upon the Magnolia or Amy Sedaris recipes. So, I thought I’d find recipes that were a little different (any many claiming to be better) than both. The four chosen for my little bake off were: Raspberry Eggplant’s Perfect Vanilla Cupcakes, Baking Bite’s Vanilla Buttermilk Cupcakes, Billy Reece’s Vanilla Vanilla Cupcakes, and Ina Garten’s Flower Cupcake Recipe.
Raspberry Eggplant’s Recipe is phenomenal! The perfect mix of moisture, light fluffiness, and sweet taste. Of all the cupcakes this one had the most flavor. Even the batter was delicious!
Baking Bite’s cake was more crumbly and had the lightest flavor of the four.
Billy’s cupcake recipe also had a more crumbly texture. The flavor for this cake was also very very light.
Ina’s Cupcake recipe was extremely moist. The flavor reminded me and my 2 helpers (my husband and sister) of cornbread; a nice distinct taste.
From the many variations in cupcake recipes, I realize that we each find a different texture and amount of flavor to the cake ideal. My winner was, hands down, Raspberry Eggplant’s recipe. Cupcakes are often referred to as a kind of canvas for frosting. I think the cake itself should be something special and distinct. Even vanilla cupcakes shouldn’t be “plain.” This recipe really is perfect!
